Smoke & Tears Jerk Marinade


1 Medium onion diced
3 Scallions chopped
¼ Cup Smoke & Tears, Smokescream sauce
2 Garlic cloves minced
1 Tbsp Five-spice powder
1 Tbsp Allspice berries ground
1 Tbsp Coarsely ground pepper
1 Tsp Dried thyme
1 Tsp Freshly grated nutmeg
1 Tsp Diamond Kosher salt
1 Tbsp Dark soy sauce
½ Cup Soy sauce
¼ Cup Brown sugar
1 Tbsp Vegetable oil


Blend all ingredients together as fine as you would like it to be.  

Prepare your choice of protein and coat in the marinade for at least 24 hours unless you are using this with a delicate vessel such as shrimp or fish.  Broil or grill for maximum caramelization and flavor.  

Serve with Smoke & Tears Chickpea Curry, Smoke & Tears Coleslaw, Smoke & Tears Hot Pan Bread and rice & peas for a Caribbean Feast!
